Greetings from the Heart: The History of Chocolate

In February 2012, FHS hosted food historian Sandra Oliver and chocolatier Andy Wilbur of Wilbur’s of Maine for an afternoon of chocolate history and treats.  Click here for Sandra’s 19th-century recipes for two different chocolate cakes.  You can also watch Sandra’s full lecture here.

Attendees tried two types of 19th-century chocolate cakes.

Andy Wilbur of Wilbur’s of Maine demonstrates the making of Maine needhams.

Dipping needhams!

Food historian Sandra Oliver discusses chocolate's delicious past in 18th- and 19th-century American cookery.

Chocolate was first consumed as a hot drink, lightly sweetened and spiced with cinnamon or cayenne pepper.

Thanks to Paul Cunningham for these photos of the event.
